Spice-Rubbed Wild Salmon with Cucumber Yogurt Sauce

SUPC# - 2583391 Wild Salmon - (6 oz Skin-on Boneless Portico Bounty)
SUPC # 2547463 Wild Salmon - (4 oz Skinless Boneless Portico Bounty)

Servings: 2 servings

Ingredients:

2 ea 6oz skin-on wild salmon fillets
2tbsp. olive oil
1 tsp. dried oregano
1 tsp. smoked paprika
1 tsp. dried thyme
¼ tsp Kosher salt

Cucumber yogurt sauce:

¼--cup plain yogurt
½ English cucumber
1 tsp. chopped fresh min
1 tsp. chopped fresh parsley
1 tsp. fresh lemon juice
Salt and pepper to taste

Cooking Instructions:

1. In a small bowl, combine the dried oregano, paprika, thyme and salt. Rub each fillet with 1 tbsp of olive oil, and then rub in spices.
2. Preheat grill to 350F-400F. Grill three min. per side or until desired doneness.
3. Purée yogurt, cucumber, fresh herbs, lemon juice, salt and pepper.
4. Remove fish from grill and top with sauce.

Stuffed Calamari with Red Pepper Sauce

SUPC # 0155313 Calamari - (5-8 Tube Only Loligo Icybay Brand)

Servings: 4 servings

Ingredients:

2 calamari steaks
2 poblano peppers
1 can of roasted red peppers
1 cup flour
1 cup panko bread crumbs
2 tablespoons of white wine vinegar
2 teaspoons cracked black pepper (fresh)
1 teaspoon of kosher salt
4 ounces pepper jack cheese
1 egg (beaten)
1 garlic clove
Toothpicks

Prepare the peppers:

1. Roast poblano peppers at 350F until blistered.
2. Remove and place in paper bag. Cool for ~10 ten min.
3. Peel skin and remove the seeds.

Prepare the stuffed calamari:

1. Lay calamari flat, pat dry and pound until tender and flat.
2. Heat oil to 375°F.
3. Prep breading station with three bowls: with flour, salt and pepper; with thoroughly whisked egg; with panko.
4. Place poblano pepper on calamari steak, layer with cheese and roll up. Secure with toothpick.
5. Coat stuffed calamari in dry mixture of flour, salt and black pepper, and then add wet mixture of beaten egg. Finally, add panko.
6. Fry in batches and do not do not overload pan. Fry until golden brown, ~2-3 min.
7. Drain, season and serve with roasted red pepper sauce.

Prepare the sauce:

1. Purée roasted red peppers, garlic, salt, pepper, white wine vinegar.
2. Set aside in a small sauce pan to warm.

Try these Fun Kitchen Secrets

Ripen Fruit Quickly
To ripen fruit overnight, place it in a paper bag with an apple. Apples release ethylene gas that hastens the maturing process of other fruits.

Save a Scorched Pan
To save a scorched pan, sprinkle that burned bottom with baking soda, then add four to five table spoons salt, plus enough water to cover, and let stand overnight. Scrape out charred remains with a rubber spatula.

Clean Stainless Steel
Rubbing alcohol will remove spots from stainless steel—pour a little of the liquid on a cotton ball and wipe over problem areas.

Tenderize Meat
And if all else fails, tenderize tough meat by gently scoring the surface with a pizza cutter—for better results, go against the grain of the meat.

Keep Honey Clear
Believe it or not, honey is the only nonperishable food substance, so don’t get rid of the stuff if it crystallizes or becomes cloudy. Microwave on medium heat, in 30 second increments, to make honey clear again.

Sysco Supplier Diversity

Sysco has announced the 2015 Supplier Diversity Heritage Award winners! Each year, Sysco recognizes three minority- and/or women-owned suppliers for outstanding performance, sales growth, product innovation or administrative efficiencies.

This year, Heritage Award winners also receive honorable recognition via an award or letter from their state’s senator.

Sysco's Minority & Women-Owned (MWBE) Supplier Spend

Sysco partners with over 500 minority- and women-owned suppliers, and each year this base continues to grow. Diverse suppliers help Sysco meet the changing demands of foodservice operators, while supporting strategic alliances that enable the continued success of Sysco, our customers and our supplier partners.

For both corporate and operating company alike, it is important that Sysco continues to utilize minority- and women-owned suppliers. We need our suppliers to reflect the diversity of our customer both to ensure we are providing the most relevant products they each demand and to support the communities we do business in. Supporting MWBE simply makes good business sense and is the right thing to do.

Sysco continues to grow its purchases (Spend) from minority- and women-owned suppliers each year. Sysco's purchases from MWBE suppliers within the first quarter of FY16 were $266 million, compared to the first quarter of FY15 of $244 million. Sysco increased its spend with MWBE suppliers by approximately 11 percent—exceeding our FY15 goal of $1 billion. We are proud of the relationships we have developed and continue to be committed to growing our investment in these suppliers’ products.

Sysco's Supplier Diversity Registration Portal

We encourage you to continue communicating to minority-owned suppliers about the importance of registering their company within the Sysco Supplier Diversity Registration Portal. There is a growing need to support Sysco’s valuable customers with products from minority-owned suppliers. Some customers require minority-owned suppliers to present their minority certifications in order to count their purchases for contract purposes.

The registration portal allows Sysco to source various MWBE suppliers for products of interest and when the need arises. It also allows the supplier to upload their MBE, WBE, SBA, Hubzone and (8A) certificates so that we have them available when needed, as well as create and/or update their company profiles.

Why Supplier Diversity is Important to Sysco Operating Companies

• Restaurant decision makers, with whom Sysco does business, are becoming increasingly multicultural, multilingual and multifaceted—often requiring niche or unique products from minority- or women-owned companies.

• Minorities and women represent the fastest growth to the consumer/business base, and contribute dramatically to the revenue stream that major corporations, including Sysco, enjoy.

• MWBEs can potentially offer a better price for Sysco and non-Sysco Brand products.

• Sysco can potentially receive quicker turnaround, including better or expanded levels of service from MWBEs.

• Supporting MWBEs allows Sysco to give back to the communities where Sysco employees live, work and do business.

• Helps MWBEs grow and participate on a level playing field with other Sysco suppliers.

• Many key customers, including the military, national accounts and gaming customers, track and depend upon Sysco's Tier 1 purchases from minority- and women-owned supplier partners.
