Following Your Food from Field to Fork

Sysco relies on a vast network of suppliers for the products we distribute. Although we trust our supplier partners, Sysco realizes that responsibility for the quality, safety and consistency of any product we deliver ultimately lies with us. This dedication to quality means that Sysco Quality Assurance personnel are on the job at every point in a product’s journey from field to fork.

To begin with, every supplier of Sysco Brand products must first pass a rigorous approval process. Even after approval, Sysco QA conducts routine audits, both announced and unannounced, to verify continued compliance with programs such as Good Agricultural Practices (GAP), Sanitation Standard Operating Procedures (SSOP), Good Manufacturing Practices (GMP), and Hazard Analysis and Critical Control Points (HACCP), along with multiple protocols covering sanitation, water quality, worker health and hygiene, and traceability.

Once a product has been approved for distribution, it must be moved from the source to one of Sysco’s many state-of-the-art warehouses. To do this, Sysco employs one of the most sophisticated delivery fleets in the industry today. From specially trained delivery staff and automated Time Temperature Recorders (TTRs) inside the trailers themselves to rigorous trailer inspections prior to offloading, Sysco goes to great lengths to preserve the quality and freshness of our products during transport.

That same effort and attention to detail goes into the storage and staging of our products as well. Sysco warehouses feature the latest advancements in layout, lighting, equipment, technology and processes. For example, multiple variable temperature zones within each warehouse, including chilled docks for loading and unloading, create perfect microclimates for produce, dairy and other temperature-sensitive products. Local QA personnel are on-hand at every distribution facility to inspect both inbound and outbound freight, allowing Sysco to receive, store and deliver products with minimum waste and maximum safety, accuracy and efficiency.

Many of the same advanced technologies used to preserve product quality during transport to Sysco warehouses are used to maintain that same level of quality during customer deliveries. At Sysco, our cold chain is never broken, so that once a product is placed at its optimal temperature, it stays there until that box reaches its final destination — from the source to the warehouse to the customer.
