Ingredients

•  Beer Onion Jalapeño Marinade
•  6 SYSCO Imperial yellow onions, sliced
•  1 qt., 1 cup dark beer
•  3 bunches SYSCO Natural cilantro, chopped
•  3 cups SYSCO Classic canola oil
•  1 tbsp. SYSCO Natural roasted garlic, chopped
•  15 SYSCO Imperial jalapeños, seeded, chopped
•  12 SYSCO Natural fresh shallots, peeled, chopped
•  1/4 tsp. SYSCO Imperial/McCormick cayenne pepper
•  Pinch SYSCO Classic salt and SYSCO Imperial McCormick pepper, to taste
•  Procedure Per Serving
•  1 SYSCO Classic chicken breast
•  1 SYSCO Classic onion Kaiser bun, sliced, toasted
•  2 oz. SYSCO Imperial yellow onion, sliced
•  1 oz. Anaheim pepper, sliced
•  2 oz. SYSCO House Recipe Hot Sauce
•  3 slices smoked cheddar cheese

Preparation

1.  Combine all ingredients in large bowl. Place 8-5 ounce boneless, skinless chicken breasts in large hotel pan. Pour marinade over chicken and place in refrigerator.
1.  Broil chicken. In hot sauté pan, cook onions and peppers in hot sauce. Place cooked chicken breast on Kaiser bun. Cover with smoked cheddar cheese. Place sautéed onions and peppers over cheese. Close with top half of Kaiser bun.
