Ingredients

•  10 oz. SYSCO Classic unsweetened chocolate, melted
•  2/3 cup SYSCO Imperial dried plum purée
•  8 SYSCO egg whites
•  2-1/2 cups SYSCO sugar
•  3-1/2 Tbsp. Arrezzio instant espresso granules
•  2-1/2 tsp. SYSCO baking powder
•  2 tsp. SYSCO Imperial/McCormick salt
•  1-1/4 cups SYSCO flour
•  SYSCO powdered sugar, as needed; optional

Preparation

1.  Thoroughly beat chocolate, dried plum purée, egg whites, sugar, coffee granules, baking powder and salt. Fold in flour. Spread batter into a greased 12x20 pan. Bake at 325ºF. until a toothpick inserted in the center comes out clean, about 30 minutes. Cool; dust with powdered sugar.
