Ingredients

•  Fresh Tomato Juice "Cocktail"
•  24 lb. fresh Florida tomatoes
•  2 tbsp. SYSCO Imperial seasoned salt
•  1/4 tsp. Per serving of additional, optional seasonings:
•  SYSCO Imperial celery salt
•  SYSCO House Recipe red pepper sauce
•  SYSCO Imperial House Recipe
•  Worcestershire sauce
•  SYSCO Imperial ground cumin
•  SYSCO Imperial dill
•  SYSCO Imperial chili powder
•  SYSCO Imperial Italian seasoning and garlic
•  juice of fresh SYSCO Imperial apple

Preparation

1.  Use tomatoes held at room temperature until fully ripe. Core tomatoes; cut into pieces small enough to fit into a juice extractor feed tube.
2.  Place tomatoes into juice extractor feed tube. Juice tomatoes according to manufacturer's directions. Transfer to a container. Stir in seasoned salt and optional seasoning, if desired. Cover and refrigerate for up to 24 hours. (Tomato pulp may be used in stock, if desired.)
