Asiago Cheese Puffs

Ingredients

•  Asiago Cheese Puffs
•  2 oz. SYSCO Brand Butter
•  1/4 cup SYSCO Supreme Extra Virgin olive oil
•  2 tsp. SYSCO Classic salt
•  1/2 tsp. caynenne pepper
•  1 qt. water
•  1 qt. all-purpose flour
•  16 Imperial eggs
•  8 oz. Each shredded Arrezzio cheese
•  Arrezzio grated parmesan cheese

Preparation

1.  Combine Butter, oil, salt, cayenne and water in saucepan. Bring to boil; stir in flour, and cook, stirring constantly, until mixture forms ball. Continue to cook, stirring over low heat, until mixture dries. Transfer to mixer.
2.  Beat dough in mixer, adding eggs slowly as each is absorbed. Mix in cheeses. Drop tablespoons of batter onto greased sheet pans. Bake at 400°F. until browned, about 20 minutes. Serve hot
