Ingredients

•  Dirty Rice
•  1 lb. 14 oz. SYSCO Imperial red onions, finely chopped
•  3 tbsp. lard or bacon drippings
•  3 lb. SYSCO Classic ground pork
•  1 tbsp. SYSCO Imperial garlic, minced
•  9 oz. SYSCO Imperial green onions with tops, chopped
•  3/4 cup SYSCO Imperial parsley leaves, chopped
•  1-1/2 tsp. SYSCO Imperial crushed red pepper
•  4-1/2 cups water
•  Salt to taste
•  1 lb. 14 oz. SYSCO Classic long-grain rice

Preparation

1.  Brown red onions in lard. Add pork and cook until meat browns. Add garlic, green onions, parsley, red pepper and water. Cook until mixture simmers; salt to taste. Set aside.
2.  Cook rice in salted, boiling water until about 3/4 cooked through. Drain; add to pork-onion mixture. Cover and heat until all liquid is absorbed. Portion 1 cup for each serving.
