Ingredients
| | 1-1/3 cups SYSCO Imperial onions, diced |
| | 1 tbsp. SYSCO Classic garlic, minced |
| | 2 tbsp. SYSCO Imperial butter |
| | 2 lb. 8 oz. Yellow split peas, rinsed |
| | 1-1/4 gal. SYSCO Imperial ham soup base, prepared |
| | 2 each SYSCO Imperial whole bay leaves |
| | 1 tbsp. SYSCO Natural fresh thyme |
| | 2-1/2 cups SYSCO Imperial coin-cut carrots |
| | 2-1/2 cups SYSCO imperial potatoes, diced |
| | 2 cups SYSCO Natural fresh chopped celery |
| | 12 oz. SYSCO Classic diced ham |
| | 2 tsp. SYSCO Classic salt |
Preparation
| 1. | . Cook onions and garlic, eight ounces each, in butter 5 minutes. Add split peas, prepared soup base, bay leaves and thyme. Cover, bring to boil, then reduce heat to simmer for 30 minutes or until peas are nearly tender. |
| 2. | Add carrots, potatoes, celery and ham. Continue to simmer over low heat 15 to 20 minutes until peas test completely soft. Remove bay leaves. Mash some of the cooked peas and potatoes in soup to adjust consistency. Season with salt. |
