Ingredients

•  2 - 64oz. cans SYSCO Classic Canned Salmon
•  2 c. SYSCO Classic Prepared Italian Dressing
•  18 (4 oz. ea.) SYSCO Imperial Red potatoes, cooked & quartered
•  3 lb. SYSCO Imperial Whole green beans, thawed
•  4 lb. SYSCO Imperial Tomatoes, vertically sliced
•  Approx. 12 oz. SYSCO Classic California Ripe Olives, sliced
•  24 SYSCO National Lettuce leaves
•  24 SYSCO Imperial Lemon wedges
•  SYSCO Classic Capers, as needed

Preparation

1.  Drain and flake salmon; drizzle with 1 cup dressing, cover and set aside.
2.  Drizzle 1 cup dressing over warm potatoes; cover and set aside.
3.  Garnish with lemon wedges and capers and serve with additional dressing on side.
4.  For each serving, arrange on lettuce leaf 3 each: potato slices, green beans, tomato slices and olives; add flaked salmon.
