Ingredients
| | 15 (2-3 lb. ea.) SYSCO Imperial whole Alaska Dungeness Crab |
| | 100 SYSCO Classic Spot Prawns (21-25 ct.) |
| | 50 SYSCO Imperial Scallops (10-20 ct.) |
| | 2 c. Arrezzio Olive oil |
| | 4 Tbsp. Arrezzio Tarragon, dried or Italian spices |
| | 3 tsp. SYSCO Imperial/McCormick salt |
| | 1 tsp. SYSCO Imperial/McCormick pepper |
| | 50 (1 oz. ea.) SYSCO Imperial large Mushroom caps, stems removed |
| | 50 slices SYSCO Classic bacon, sliced |
| | 25 (approx. 6 oz. ea.) SYSCO Imperial fresh tomatoes, halved |
Preparation
| 1. | Remove back and scrub with stiff brush to remove insides and gills; pull crab legs from shoulders; crack crab legs. Place crab, prawns and scallops in large bowl; cover and refrigerate. |
| 2. | Combine olive oil, tarragon, salt and pepper; pour over seafood and mix well. |
| 3. | Place 1 scallop in each mushroom; wrap with bacon and secure with toothpick. |
| 4. | For each serving, skewer and grill 3 crab legs, 2 prawns, and 1 wrapped mushroom 2 minutes on each side. Add 1 tomato half to grill after first 2 minutes. Serve with warm bread and green salad. |
